Breaded Turkey à la Parmigiana

6 slices turkey breast, about 1/3 inch (1 cm) thick
1 cup fine dry breadcrumbs
1/4 tsp salt
1/4 tsp oregano
1/8 tsp pepper
2 eggs, slightly beaten
3 to 4 tbsp oil
14 oz can spaghetti sauce
1/2 lb sliced Mozzarella cheese
1/2 cup finely chopped green pepper
1/2 cup finely chopped mushrooms


Preheat oven to 350ºF (180ºC). Combine breadcrumbs, salt, oregano and pepper.
Dip turkey slices in egg then dredge through seasoned bread crumbs. Heat oil in skillet and brown breaded turkey slices on both sides until lightly crisp. Transfer to 11 x 9 inch (34 x 22 cm) baking dish.
Cover turkey slices with spaghetti sauce, top each piece with Mozzarella cheese and sprinkle with green pepper and mushrooms.
Bake, uncovered, until sauce bubbles and cheese melts. This should take about 20 minutes.
