Breakfast Skillet with Apple Honey Turkey Sausage

Ingredients

2 links Granny’s Apple Honey Turkey Sausage
1 tbsp | 15 ml olive oil
1/2 cup | 125 ml red onion, sliced
3/4 cup | 185 ml baby potatoes, cooked and sliced
1 cup | 250 ml baby spinach
4 eggs
1/2 tsp | 2.5 ml sea salt
1/4 tsp | 1.25 ml freshly ground black pepper
1/4 cup | 65 ml Swiss cheese, shredded

Directions

In a medium frying pan, sauté sausage, red onion and baby potatoes over medium heat in olive oil until lightly browned.
Reduce heat to low and add spinach continue cooking, while stirring until just wilted.
Crack eggs on top being careful not to break the yolks.
Add salt and pepper and cheese.
Cover and simmer until eggs reach the desired doneness. Serve warm.
