Cajun Roast Chicken

Ingredients

3 lbs | 1,350 g Granny's Whole Chicken
1 tsp | 5 ml dried basil (1 tbsp | 15 ml fresh)
1 tsp | 5 ml dried oregano (1 tbsp | 15 ml fresh)
2 tsp | 10 ml chili powder
2 tsp | 10 ml ground cumin
1/2 tsp | 2.5 ml salt
4 tsp | 20 ml wine vinegar

Directions

Remove top rack from oven; preheat to 350°F (180°C).
Combine herbs and wine vinegar. Let sit for 10 minutes to make a paste.
Discard giblets. Rinse chicken and pat dry. Set chicken on vertical roaster. Spread herb mix on chicken.
Place on bottom rack of oven and roast until thermometer reads 180°F (80°C), for approximately 1 1/4 to 1 1/2 hrs. If the chicken is browning too quickly, cover loosely with foil. Let stand 15 minutes and carve.
