Chicken Skewers

4 Granny's Boneless Chicken Breasts, cut into 1 inch cubes
2 cloves of garlic, minced
1 tsp | 5ml ground cumin
1 tsp | 5 ml ground coriander
1 tbsp | 15 ml olive oil
1 tbsp | 15 ml grated lemon zest
2 tsp | 10 ml reduced sodium soya sauce
2 tsp | 10 ml brown sugar
1 1/2 tsp |7.5 ml grated gingerroot
1 large shallot, minced
8 wooden (pre-soaked) or metal skewers


To make marinade, combine all ingredients, except chicken, in a small bowl.
Pour marinade over chicken pieces in a large, heavy duty, resealable plastic bag. Make sure all pieces are coated with marinade. Marinate overnight in the refrigerator.
Thread chicken cubes onto skewers. Grill for 4-5 minutes per side over medium grill, turning often.
Serve immediately. You can dip them in plum sauce or eat them just as they are.
