Chicken Teriyaki with Savoury Udon Noodles

Prep Time: 45 minutes Cooking Time: 20 minutes 4 servings


1 lb | 450 g Granny's Chicken Breast, cut into pieces
2 tbsp | 30 ml oil, divided
1 garlic clove, minced
1 tbsp | 15 ml fresh ginger, minced
1/2 cup | 120 ml onion, sliced
3 green onions, cut into 1 inch lengths
1 cup | 240 ml red peppers, sliced
2 cup | 475 ml udon noodles, cooked*

Teriyaki Sauce

1 tsp | 5 ml chili flakes (optional)
1/2 cup | 120 ml soy sauce, low sodium
1/4 cup | 60 ml sugar
1/4 cup | 60 ml honey
1 tsp | 5 ml sesame oil
1 tbsp | 15 ml oil
1 garlic clove, minced


Teriyaki Sauce

Combine chili flakes, soy sauce, sugar, honey, sesame oil, oil and garlic in a pot over medium heat.
Bring to a boil and simmer for five minutes. Set aside.


In a large bowl, combine 1 tbsp oil, Granny's Chicken, garlic and ginger.
Heat remaining oil in a large pan on medium and sauté chicken until it is crisp on the outside and cooked through.
Add onions and red peppers and cook a few minutes more or until veggies are tender crisp.
Add udon noodles and teriyaki sauce. Sauté a few minutes more.
Serve sprinkled with chili flakes.

* If you are unable to find udon noodles, any long pasta will do.
