Cranberry Chipotle Turkey Sausage Tacos

Ingredients

1 pkg | 375 ml Granny’s Cranberry Chipotle Turkey Sausage, casings removed
1 tbsp | 15 ml coconut oil
1/4 cup | 60 ml onion, finely diced
1/4 cup | 60 ml celery, finely diced
1/4 cup | 60 ml cherry tomatoes, finely diced
1/8 tsp | 0.60 m ground allspice
2 tbsp | 30 ml green onion, finely sliced
1 tbsp | 15 ml lime juice

Tacos

8 soft or hard taco shells
1 1/2 cups | 500 ml iceberg, Romaine lettuce shredded
1/2 cup | 125 ml avocado, diced
1/4 cup | 60 cherry tomatoes, chopped
1/2 cup | 125 ml Manchego cheese, shredded
2 tbsp | 30 ml cilantro, chopped

Directions

Heat oil in a frying pan to medium-high and sauté sausage, onion and celery crumbling the sausage with a spoon as it cooks.
Once the meat is browned, add the tomatoes and allspice and cook for an additional 2 minutes.
Add the green onion and lime juice and stir, then set aside.
Serve in tacos topped with lettuce, avocado, tomatoes, cheese, cilantro and your favourite hot sauce.
