Feta Stuffed Greek Burgers

Ingredients

1.25 lb | 565 g ground turkey
1/4 cup | 65 ml breadcrumbs
1tsp | 5 ml dried oregano
1 egg
8 oz | 225 g feta cheese
1/2 cup | 125 ml kalamata olives, pitted and chopped
1 tbsp | 15 ml lemon juice
1 tsp | 5 ml lemon zest
to taste salt and pepper

Directions

In a large bowl, combine turkey, breadcrumbs, olives, lemon zest, lemon juice, egg, salt and pepper. Mix well.
Shape the turkey mixture into four equal sized balls. Insert thumb into centre of each meatball to create a pocket. Put two ounces of feta in the centre of each meatball and close meat around cheese.
Shape into four burgers. Grill for burgers 5-7 minutes on each side, over medium heat, or until the internal temperature reaches 175°F (80°C). Serve with Greek pita, tzatziki sauce, tomatoes and cucumbers.
