Giblet Gravy

Prep Time: 2 minutes Cooking Time: 10 minutes 6 servings


1/4 cup | 65 ml turkey giblets, finely chopped
3 tbsp | 45 ml turkey drippings
2 1/2 cups | 625 ml turkey stock
3 tbsp | 45 ml all-purpose flour
1/2 tbsp | 7.5 ml fresh sage, chopped
to taste salt and pepper


Heat pan drippings in a large skillet over medium heat. Gradually add flour and stir until golden.
Slowly add the turkey stock, stirring with a whisk until blended.
Add the sage, pepper, salt and giblets. Bring to a boil, remove from heat and serve warm.
