Mediterranean Turkey Sausage Pasta Salad

Ingredients

1 package (375 g) Granny’s Mediterranean Turkey Sausage
1 tbsp | 15 ml olive oil
¼ cup | 60 ml red onion, chopped
½ cup | 125 ml yellow bell pepper chopped
2 tsp | 10 ml pine nuts
4 medium Roma tomatoes cut in half lengthwise, seeds removed
2 tbsp | 30 ml fresh basil, thinly sliced
1 lb | 454 g penne or fusilli pasta, cooked and cooled
¼ cup | 125 ml Parmesan cheese, freshly grated
DRESSING
¼ cup | 60 ml white wine vinegar
½ cup | 120 ml olive oil
1 tbsp | 15 ml Dijon mustard
1 tsp | 5 ml sea salt
¼ tsp | 1.25 ml freshly ground black pepper

Directions

Preheat BBQ to medium heat (350°F-375°F).
Mix olive oil, onion, yellow pepper, tomatoes and pine nuts and cook them in a BBQ safe roasting pan over direct heat, stirring occasionally. Cook until vegetables are browned.
Grill sausages while the vegetables are cooking until they are fully cooked; a meat thermometer should read 170°F (77°C).
Allow vegetables and sausage to cool completely and then cut sausage into ¼” rounds. Mix vegetables, sausage, pasta, dressing, and basil then chill for an additional hour before serving.
