Mediterranean Turkey Sausage Stuffing

Ingredients

1 pkg (375 g) Granny’s Mediterranean Turkey Sausage, sliced
1 tbsp | 15 ml butter
2 tbsp | 30 ml olive oil
3 cups | 750 ml turkey or chicken stock, homemade or low sodium
1 cup | 250 ml onion, diced
1/2 cup | 125 ml roasted bell peppers, diced
1/2 tsp | 2.5 ml sea salt
1/4 tsp | 1.25 ml freshly ground black pepper
1/4 cup | 65 ml pine nuts, toasted
1/4 cup | 65 ml fresh Parmesan cheese, shredded
2 tbsp | 30 ml Italian parsley, coarsely chopped
10 cups | 2.5 l rustic Italian bread, cubed (not too fresh)

Directions

Grease a large casserole dish with butter and preheat oven to 350°F (177°C).
Sauté onion and sausage in a pan with olive oil until lightly brown. Let cool.
Mix all remaining ingredients in a large bowl.
Place mixture into casserole dish and bake for 1.5 hours.
