Mediterranean Turkey Sausage Pasta

Prep Time: 10 minutes Cooking Time: 20 minutes 4-6 servings

1 package (375 g) Granny’s Mediterranean Turkey Sausage, sliced into bite size pieces
1 tbsp|15 ml olive oil
½ cup | 125 ml onion, finely chopped
1 cup | 250 ml yellow bell pepper, chopped
1 tbsp | 15 ml garlic, finely chopped
1-28 oz can (796 ml) whole Italian tomatoes, blended with juice
1 cup | 250 ml (packed) baby spinach chopped
¼ cup | 65 ml firm unripen goat cheese
1 tsp | 5 ml sea salt
¼ tsp | 1.25 ml freshly ground black pepper
1 package (500 g) farfalle pasta or penne pasta
¼ cup | 65 ml freshly grated parmesan cheese


Cook pasta in a large pot of boiling water according to the package instructions.
Heat oil in a large skillet over medium-high heat and add sausage, onion, bell pepper and garlic. Cook until lightly browned.
Add tomato and simmer for 10 minutes.
Remove from heat and stir in spinach and goat cheese.
Season with salt and pepper
Mix sauce and pasta
Sprinkle parmesan on top of each serving.
