One-Pot Cranberry Chipotle Sausage Rice Pilaf

1 package (375 g) Granny’s Cranberry Chipotle Turkey Sausage, sliced into bite size pieces
1 tbsp | 15 ml vegetable oil
1 cup | 250 ml onion, diced
1 cup | 250 ml parboiled rice
1 1/2 cup | 375 ml water
1/2 tsp | 2.5 ml cider vinegar
3/4 cup | 185 ml Brussel sprouts, sliced
1/4 tsp | 1.25 ml freshly ground black pepper
1/2 tsp | 2.5 ml sea salt
2 tbsp | 30 ml hazelnuts, toasted and chopped


In a large skillet with a lid, sauté sausage and onion over medium heat in oil until lightly browned.
Reduce heat to low and add rice, water and vinegar. Cover and simmer for 5 minutes.
Stir once and then add Brussel sprouts and simmer for an additional 5 minutes.
Remove from heat, stir, then cover and let sit for 5 more minutes.
Season with salt and pepper.
Serve with hazelnuts sprinkled on top.

*If you don’t have hazelnut, you can substitute this ingredient with 2 tbsp of slivered almonds.
