Spanish Chicken Recipe

1 package Granny's Chicken Thighs
2 tbsp | 30 ml butter
1 medium onion, cut into wedges
2 garlic cloves, chopped
3 carrots, sliced
1/4 cup | 65 ml parsley, chopped
2 bay leaves
1/4 cup | 65 ml dry white wine or chicken broth
1/4 cup | 65 ml pitted black olives, chopped
1/4 cup | 65 ml pine nuts
2 firm tomatoes, diced
2 tbsp | 30 ml olive oil


Sauté chicken thighs in olive oil and butter over medium heat until well browned. Remove chicken and set aside.
Sauté onion and garlic until translucent in the same skillet.
Put the chicken back in the pan, adding carrots, parsley, bay leaves and wine. Cover and simmer for 30 minutes or until tender.
Remove bay leaves. Add olives, pine nuts and tomatoes. Simmer for a few more minutes until heated through.
Transfer chicken and vegetables to a hot platter. Serve the extra liquid as a sauce on the side.
