Turkey Quesadillas

1/2 lb | 225 g turkey breast cut into thin strips or turkey stir fry strips
1 tbsp | 15 ml canola oil
1 large sweet green pepper, thinly sliced
1-2 medium red onion, thinly sliced
1 tsp | 5 ml chilli powder
to taste hot pepper sauce
to taste salt and pepper
8 large flour tortillas
3 cups | 750 ml shredded Monterey Jack cheese
1 cup | 250 ml salsa (optional)


Heat oil in large non-stick skillet, over medium high heat. Add turkey and cook, stirring frequently until it is no longer pink. Stir in green pepper, onion and chilli powder.
Cook until onion just begins to soften. Season with hot pepper sauce, salt and pepper. Remove turkey mixture to a bowl. Wipe out skillet with paper towel.
Brush one side of each tortilla with a little oil. Reduce heat to medium, place one tortilla, oiled side down in skillet. Spoon one quarter of turkey mixture over tortilla and sprinkle with ¾ cup (175 ml) cheese. Place another tortilla over top, oiled side up.
Cook on both sides until lightly browned and cheese is melted. Repeat with remaining tortillas. Cut each into 6 wedges. Serve hot with salsa if desired.
