Apple and Sweet Potato Chicken Curry

Ingredients

1 Package Granny's Lean Ground Turkey Breast
2 tbsp | 30 ml vegetable oil
2 garlic cloves, minced
1 medium onion, finely chopped
1/2 tsp | 2.5 ml ground cinnamon
2 tbsp | 30 ml curry powder
1 tbsp | 15 ml ground cumin
1/2 tsp | 2.5 ml dried chilli flakes
1 tsp | 5 ml sea salt
1 28 oz | 796 ml can plum tomatoes, crushed with juices
1 1/2 cups | 375 ml coconut milk
1 tbsp | 15 ml honey
2 cups | 475 ml sweet potato, peeled and cubed
1 green apple, peeled and diced
to taste ground pepper
to garnish fresh cilantro sprigs

Directions

In a large skillet, heat oil over medium-high heat.
Add garlic and onion and cook until soft. About 5 minutes.
Add chicken, cinnamon, curry powder, cumin, chilli flakes and salt. Stir mixture with wooden spoon to break up chicken as it cooks, about 5 minutes
Add tomatoes, coconut milk, honey & sweet potatoes. Simmer, uncovered until sauce thickens, about 25 to 30 minutes. Ensure to stir often to break up tomatoes.
Add diced apple and cook 4 minutes longer.
Season with pepper and additional salt if needed.
Garnish with cilantro sprigs.
