Chicken Salad

Ingredients

1 Granny’s boneless chicken breasts, poached and diced
2 tbsp. (30 ml) fresh chives, finely chopped
1 stick celery, chopped
1 green onion, finely chopped
2 tbsp. (30 ml) Greek yogurt
1 tsp. (5 ml) Dijon mustard
Salt and pepper

Toppings

Several arugula leaves
A few thin radish slices
Some toasted bread slices

Directions

In a mixing bowl, combine diced chicken breast, fresh chives, chopped celery, finely chopped green onion, Greek yogurt, Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly coated.
Season with additional salt and pepper to taste, if needed. Set aside.
To serve, spread the chicken salad mixture on toasted bread slices.
Top each toast with arugula leaves and thin radish slices.
