Ground Turkey & Bok Choy Stir Fry

Ingredients

1lb | 400g Granny's Lean Ground Turkey
1/4 cup | 60 ml soya sauce
2 tsp | 10 ml rice vinegar
2 tsp | 10 ml shaoxing wine (Chinese cooking wine)
1/2 tsp | 2,5 ml honey
3 garlic cloves
1 tsp | 5 ml chili garlic sauce (optional)
1/4 cup | 60 ml turkey broth
1 tsp | 5 ml cornstarch
2,5 cups | 600 ml bok choy, chopped
1 cup | 250 ml green bell pepper, diced

To serve

1/4 cup | 60 ml green onion, chopped
1/4 cup | 60 ml peanut, chopped
brown rice, cooked

Directions

In a large skillet, brown turkey over medium heat.
Combine soya sauce, rice vinegar, Shaoxing wine, honey, garlic, chili garlic sauce, turkey broth and cornstarch in a bowl. Mix well.
Increase heat to medium high and add bok choy and green bell pepper until bright green and crisp - about 3 minutes.
Add sauce and stir to further cook turkey and veggies. Bring to a simmer for 1 minute, mixing constantly.
Remove from heat and serve over a bed of fresh brown rice and top with freshly cut green onions and chopped peanuts.
