Mexican Style Chicken Casserole

Ingredients

1 Package Granny's Lean Ground Chicken Thigh
2 tbsp | 30 ml vegetable oil
1/4 cup | 65 ml red onion, diced
2 tsp | 10 ml ground cumin
1 tsp | 5 ml ground paprika
1/2 cup | 125 ml green salsa
1/4 cup | 65 ml all-purpose flour
1/2 cup | 125 ml canned corn, drained
1/2 cup | 125 ml sour cream
1 1/2 cup | 375 ml cheddar cheese, shredded
to taste sea salt and ground pepper
1 10" flour tortilla
to garnish cilantro leaves
to serve sour cream
to serve cheddar cheese, shredded

Directions

Preheat oven to 375°F (190°C).
Heat oil in a large skillet over medium-high heat.
Add chicken and red onion. brown, ensure to break up the mixture with a wooden spoon, until no longer pink, about 5 minutes.
Sprinkle in flour and mix well. Add salsa and cook 3 minutes until slightly thickened.
Fold in sour cream and 1 cup | 250 ml of the cheese. Taste and add salt and pepper as needed.
Spoon chicken mixture into a greased 10" round baking dish.
Top with a tortilla shell and sprinkle with remaining cheese.
Bake for 25 minutes then remove from oven. Allow to rest for 10 minutes before serving.
Garnish with cilantro, sour cream, cheese and red onion.
