Bruschetta with Chicken, Parmesan Aioli and Tomato Salsa

Ingredients

Chicken Bruschetta

1/2 Package Granny's Boneless, Skinless Chicken Breast
1 tbsp | 15 ml vegetable oil
to taste sea salt and ground pepper
2 tsp | 10 ml garlic powder
1 baguette, sliced
to garnish fresh basil leaves

Parmesan Aioli

2 garlic cloves, minced
1 cup | 250 ml freshly grated parmesan cheese
1 tbsp | 15 ml fresh lemon juice
1 cup | 250 ml mayonnaise
to taste sea salt and ground pepper

Tomato Salsa

3 ripe Roma tomatoes, chopped
2 garlic cloves, minced
2 tbsp | 30 ml extra virgin olive oil
2 tbsp | 30 ml balsamic vinegar
1/4 cup | 65 ml fresh basil, chopped
to taste sea salt and ground pepper

Directions

Chicken Bruschetta

Heat oil in large skillet over medium heat.
Dice the chicken and season with salt, pepper and garlic powder.
Add seasoned chicken to skillet and cook until browned and no longer pink, about 4-5 minutes. Remove from heat.
To assemble, preheat oven to 350°F | 175°C.
Spread aioli on bottom of both baguette slices. Top with cooked chicken.
Bake the slices in the oven for 10 minutes. Remove from heat.
Top with tomato salsa and basil.

Parmesan Aioli

Combine all ingredients in small bowl and mix well.
Cover and chill until ready to use.

Combine all ingredients in bowl and mix well.
Set aside until ready to use.
