Caramelized Onion-Balsamic Cranberry Sauce

Prep Time: 5 minutes Cooking Time: 20 minutes 12 servings

Ingredients

1 tbsp | 30 ml olive oil
2 cups | 500 ml red onion, finely chopped
1/4 cup | 65 ml balsamic vinegar
4 cups | 1 ltr fresh or frozen cranberries
2 cups | 500 ml brown sugar

Directions

In a heavy bottomed saucepan cook onions in olive oil over medium-low heat stirring frequently until caramelized.
Add balsamic vinegar, cranberries and brown sugar.
Simmer until berries break open and sauce thickens.
Cool and then serve.
