Cheddar, Apple and Turkey Empanadas

Ingredients

1/2 Package Granny's Lean Ground Turkey
2 tbsp | 30 ml unsalted butter
2 tbsp | 30 ml red onion, chopped
2 garlic, minced
1 granny smith apple, peeled and cut into 1/4 inch pieces
1 cup | 250 ml sharp white Cheddar, shredded
2 oz cream cheese, soften at room temperature
1/4 cup | 65 ml chopped fresh cilantro
1 jalapeño chili, diced and minced
to taste sea salt & ground pepper
1 egg, beaten
1 package puff pastry, thawed
to serve sour cream

Directions

Heat butter in large skillet over medium heat.
Add turkey, onions and garlic. Cook, until turkey is browned or about 5 to 7 minutes.
Add apples and cook for 2 minutes longer. Remove from heat.
Mix in cheeses, cilantro and jalapeño. Season with salt and pepper. Set aside.
Preheat oven to (425°F | 220°C).
Cut each puff pastry sheet into 4 equal squares (you will have 8 squares with 2 sheets of pastry). Add filling mixture equally to the center of each pastry square.
Brush edges with egg wash. Fold into a triangle & pinch edges close with tines of a fork to seal. Place triangles on a parchment lined baking sheet.
Place in oven for 25 to 30 minutes or until pastry is golden brown and flaky.
Serve with sour cream.

Cooking tip: These empanadas can be frozen! Simply place uncooked empanadas on a parchment-lined baking sheet and place them in the freezer. Once frozen, store in an air-tight container. When ready to use, bake for an additional 5 minutes.
