Chicken Mango Crostini

Prep Time: 15 minutes Cooking Time: 20 minutes 18 Crostini servings


1 Package Granny's Boneless Skinless Chicken Breast
2 tbsp | 30 ml olive oil
1/2 mango, peeled & diced into 1/4 inch cubes
2 tbsp | 30 ml jalapeno, diced
2 tbsp | 30 ml red onion, diced
5 tbsp | 45 ml asiago, shredded
1/4 tsp |1.25 ml sea salt
to taste ground pepper
1 french baguette, sliced into 1/4 inch rounds
1 tbsp | 15 ml cilantro


Preheat oven to 375°F (190°C).
Sauté chicken and onion in oil over medium heat until just cooked.
Add mango and jalapeno and continue to cook for 2 minutes.
Cool, then add cilantro, asiago and seasoning.
Place baguette on a baking sheet and top generously with mixture.
Bake for 15 to 20 minutes and serve warm.
