Chicken Stir Fry

Ingredients

1 Whole Granny's Chicken
1tbsp | 15 ml cornstarch
1 tbsp | 15 ml fresh ginger, grated (or 1 tsp | 5 ml dried)
1 tsp | 5 ml sesame oil
3 tbsp | 45 ml soya sauce
1/2 cup | 120 ml chicken stock
3 cups | 700 ml thinly sliced vegetables (carrots, celery, broccoli, snow peas, red or green pepper)
1 tbsp | 15 ml vegetable oil

Directions

Cut deboned chicken into narrow strips or bite-sized pieces. In wok or large fry pan, stir-fry chicken in 1 tbsp (15 ml) vegetable oil until no loner pink.
Remove from pan. Add vegetables, onion, garlic and ginger and stir-fry until vegetables are tender crisp (approximately 3-5 minutes).
In a small bowl combine soya sauce, sesame oil, stock and cornstarch. Stir into vegetables and add chicken. Cook until heated through and sauce thickens.
