Collins Turkey Chili

Ingredients

2 lbs | 900 g lean ground turkey breast
2 tbsp | 30 ml olive oil
1 1/2 cups | 375 ml onion, chopped
2 tbsp | 30 ml garlic, coarsely chopped
1 cup | 250 ml green bell pepper, seeded and chopped
1 tbsp | 15 ml jalapeno pepper, chopped
2 tsp | 10 ml sea salt
2 tbsp | 30 ml chili powder
1/2 tsp | 2.5 ml red pepper flakes
1 tbsp | 15 ml smoked paprika
1 tbsp | 15 ml ground cumin
2 tsp | 10 ml dried oregano
1 tsp | 5 ml freshly ground black pepper
1 tbsp | 15 ml brown sugar
3 tbsp | 45 ml cocoa
1 tbsp | 15 ml Worcestershire sauce
2 (26 oz | 796 ml) whole tomatoes, diced
1 (4 oz | 127 ml) green chilies, chopped
1 (18 oz | 540 ml) tomato sauce
2 (18 oz | 540 ml) pinto beans, drained
1 cup | 250 ml beer (optional)
Serve with: sour cream, shredded Jack cheese, chopped red onion, and chopped cilantro

Directions

In a large pot, saute ground turkey in one tablespoon of olive oil. Season with salt and cook until no longer pink.
Transfer turkey to a plate and set aside.
In the same pot, heat remaining olive oil over medium heat and add onions, green peppers, jalapeno, and garlic. Cook until veggies are very soft, 10-12 minutes.
Add the turkey back to pot then add the chili powder, red pepper flakes, paprika, cumin, oregano, pepper, cocoa and brown sugar and season with salt to taste.
Stir in Worcestershire sauce, diced tomatoes, green chilies, tomato sauce, pinto beans and beer.
Partially cover and simmer gently, stirring occasionally for about one hour.
