Crispy Chicken and Potato Croquettes

Ingredients

1/2 Package Granny's Lean Ground Chicken Thigh
2 tbsp | 30 ml butter
2 cups | 500 ml mashed potatoes
1/3 cup | 80 ml green onions, chopped
1 tbsp | 15 ml fresh parsley, chopped
1 tsp | 5 ml fresh thyme, chopped
1 large egg, beaten
1/4 cup | 65 ml dried breadcrumbs
1/2 tsp | 2.5 ml sea salt
1/4 tsp | 1.25 ml ground pepper
1/4 cup | 65 ml all-purpose flour
to fry vegetable oil

Directions

Heat a medium sized skillet to medium-high heat.
Melt butter. Add the chicken and cook for 4-5 minutes. Ensure to break up the chicken up with a fork. Remove from heat and let cool.
In a medium bowl, combine mashed potatoes, green onion, parsley, thyme and cooled chicken.
Stir in egg and bread crumbs. Season with salt and pepper.
Scoop 1/4 cup | 65 ml of chicken mixture and shape into 1 1/2 inch logs. Roll in flour and dust off excess.
Place on a baking sheet lined with parchment. Cover and chill for 30 mins before frying.
In large nonstick skillet, heat 1 inch of vegetable oil over medium heat.
Fry croquettes until brown on all sides, around 3 minutes.
Drain on fried croquettes on paper towels. Serve immediately.
