Gin and Tonic Wings

2 pkg (900 g) Granny's Chicken Wings
1/4 cup tonic water
3 ounces gin
3 tbsp. fresh lime juice
1/2 tsp. sea salt
1/2 tsp. ground coriander
1/2 tsp. dried juniper berries, crushed (if available)
1 zest of lime
to taste ground pepper


Mix all ingredients in a bowl.
Marinate wings in the refrigerator for 1-3 hours.
Preheat oven to 400°F (200°C).
Bring a pot of water to a boil and add wings.
Return to a boil and simmer for 5 minutes.
Drain wings in a colander and then pat dry with paper towel.
Place wings on a baking sheet lined with parchment paper and cook for 20 minutes then turn and cook for another 20 minutes or until wings are crispy.
