Goat Cheese Chicken Burgers

2 lb | 900 g Granny's Ground Chicken
1/4 cup | 60 ml breadcrumbs
1 tsp | 5 ml garlic, minced
1/4 cup | 60 ml flat leaf parsley
1 egg
2 tbsp | 30 ml fresh basil, coarsely shredded
1/4 cup | 60 ml onion, finely chopped
1/2 tsp | 2.5 ml sea salt
1/2 cup | 120 ml goat cheese, softened
12 tbsp | 180 ml bruschetta topping


Preheat grill.
Combine chicken, breadcrumbs, onion, garlic, egg parsley and salt. Form into 6 patties, place a heaping tablespoon of goat cheese on each patty, fold in half and reform patties into its original shape. Alternately goat cheese can be place on top of each patty after grilling.
Grill patties about 10 minutes per side, or until a thermometer inserted into the patty reads 175ºF (80ºC).
Serve on hamburger buns topped with lettuce and bruschetta topping.
