Grilled Turkey & Caramelized Onion Sandwich

1 1/2 cups | 375 ml Granny’s Leftover Turkey or Granny’s Boneless, Skinless Turkey Breast, roasted
2 tsp | 10 ml butter
1 tsp | 5 ml olive oil
1 large red onion, thinly sliced
2 tbsp | 30 ml old fashioned grainy mustard
8 slices rye or multigrain bread
4 oz. | 115 g old white cheddar, sliced
2 oz. | 60 g soften butter


Heat butter and oil in a heavy-bottomed skillet over medium-low heat.
Slowly sauté onion, stirring frequently until golden brown.
Spread mustard on one side of bread and then add 1/4 of the sautéed onion, some turkey and sliced cheese to each sandwich.
Top with another slice of bread, then butter outsides of each sandwich and grill in skillet on each side until lightly browned and cheese is melted. Serve warm.
