Herb Breaded Provencal Chicken Thighs

1 1/2 Packages Granny's Chicken Thighs
1/4 cup | 65 ml Dijon mustard
1 cup | 250 ml fresh homemade bread crumbs
2 garlic cloves, minced
1/4 cup | 65 ml fresh parsley, chopped
1/2 tsp | 2 ml sea salt
1/4 tsp | 1.25 ml ground pepper
2 tbsp | 30 ml olive oil


Preheat oven to 400°F (200°C).
Line a baking sheet with a metal rack (this makes for a crispy chicken thighs).
Brush chicken thighs with Dijon mustard.
Combine bread crumbs, garlic, parsley, salt, pepper and oil in a medium bowl. Pat mixture over the mustard chicken and place chicken on a wire rack.
Bake for 40-45 minutes or until a thermometer inserted in thickest part of meat, away from any bones, registers 165°F (75°C).
