Honey Mustard and Tarragon Glazed Turkey Breast

Ingredients

1 Granny's Boneless, Skinless Turkey Breast
to taste sea salt and ground pepper
1 tbsp | 15 ml Dijon mustard
1 tsp | 5 ml olive oil
1 tbsp | 15 ml honey
1 tbsp | 15 ml fresh tarragon
1/4 tsp | 1.25 ml ground pepper

Directions

Glaze

Pick leaves from tarragon and discard stems.
Chop tarragon leaves and mix with Dijon mustard, oil, honey and pepper to form a paste.

Oven Method

Preheat oven to 350°C (177°C).
Season breast with salt and pepper.
Place breast on wire rack in a roasting pan and cook for approximately 1 hour. Cook to a minimum internal temperature of 170°F (77°C).
Brush generously with the Honey Mustard and Tarragon glaze.
Cook for an additional 5 minutes. Let stand for 10-15 minutes before slicing.

Barbecue Method

Preheat barbecue to medium-high. 375°C (190°C).
Season breast with salt and pepper.
Place breast directly on grill over indirect heat with the lid down for approximately 45 minutes. Cook to a minimum internal temperature of 170°F (77°C).
Brush generously with Honey Mustard and Tarragon glaze, turn and brush on bottom as well.
Cook for an additional 2.5 minutes on each side. Remove from grill, cover loosely with foil and let stand for 10-15 minutes before slicing.
