Kale, Potato and Turkey Soup

Ingredients

1 lb | 450g Granny’s Turkey Thighs, roasted and chopped
4 strips bacon, chopped
1 cup | 250 ml yellow onion, chopped
1/2 cup | 125 ml carrots, peeled and chopped
1 1/2 cup | 375 ml russet potatoes, peeled and cut small
1 tsp | 5 ml sea salt
1/4 tsp | 1.25 ml ground pepper
6 cups | 1400 ml homemade or low sodium turkey or chicken stock
2 tsp | 10 ml dried thyme leaves
1 1/2 cup | 375 ml half and half cream
1 cup | 250 ml frozen kale

Directions

Heat the bacon in a soup pot over medium high heat until crispy.
Add onion, carrots, russet potatoes and salt and pepper. Cook for 5 minutes. Add roasted turkey.
Add turkey stock and dried thyme leaves. Cook for 15 minutes or until potatoes are tender.
Add half and half and frozen kale. Bring back to a slow simmer and cook for 3 minutes. Serve warm.
