Lemon Garlic Skillet Turkey Thighs

Ingredients

2 Packages Granny's Turkey Thighs
to season sea salt and ground pepper
2 tbsp | 30 ml vegetable oil
1/2 cup | 125 ml white onion, sliced
5 garlic cloves, minced
1/3 cup | 75 ml homemade or low sodium turkey or chicken stock
1/4 cup | 65 ml fresh lemon juice
1 tbsp | 15 ml all purpose flour
10 green olives
3 tsp | 15 ml fresh thyme, chopped (1/4 tsp | 2.5 ml ) dried
1 lemon, sliced

Directions

Preheat oven to 425°F (215°C).
Pat turkey dry with paper towels and season with salt and pepper.
In a large oven-proof skillet, heat oil and add onions and garlic, cooking until soft, about 5-7 minutes.
Add stock and lemon juice. Whisk in flour then add olives and thyme. Bring sauce to a boil.
Add turkey and arrange lemon slices and 2 tsp | 10 ml of the thyme over top.
Bake turkey until no longer pink, about 45-55 minutes or until internal temperature reaches 170°F (75°C).
Transfer turkey to large plate. Spoon sauce over turkey.
Serve with lemon slices and olives. Garnish with additional fresh thyme.
