Madagascar Green Peppercorn Turkey Gravy

Prep Time: 5 minutes Cooking Time: 10 minutes 10-12 servings

Ingredients

3 cups | 750 ml turkey broth, homemade or low sodium stock
1/2 cup | 125 ml 35% cream
2 tbsp | 30 ml green peppercorns, rinsed and crushed
3 tbsp | 45 ml cornstarch, mixed with 1/8 cup cold water
to taste salt

Directions

Once your turkey is fully cooked tilt it so the juices drain into roasting pan. Transfer turkey to a platter, reserving the drippings in the roasting pan.
Let the turkey rest in a warm place loosely covered for up to 30 minutes. Strain the drippings into a saucepan, then skim off and discard fat. Add stock, cream and peppercorns and simmer for 10-15 minutes. Add corn starch mixed with water and return to a simmer.
Add more stock if too thick or more starch and water if too thin. Season with salt and serve with roast turkey.
