Marinated Citrus Chicken with Grapefruit Peach Salsa

Ingredients

Marinated Citrus Chicken

1 Package Granny's Boneless, Skinless Chicken Breast
to season sea salt and ground pepper
1/4 cup | 65 ml freshly squeezed lemon juice
1/4 cup | 65 ml rum
1 tbsp | 15 ml extra virgin olive oil
1 tbsp | 15 ml honey
2 tbsp | 30 ml fresh parsley, chopped
1 tbsp | 15 ml fresh chives, chopped

Grapefruit Peach Salsa

2 ripe peaches, peeled and cubed
1 large pink grapefruit, peeled and cubed
1 tbsp | 5 ml cilantro, freshly chopped
1/4 cup | 65 ml red onion, chopped
1 tsp | 5 ml olive oil
1 tsp | 5 ml chives, chopped
1 jalapeño, seeds removed and chopped
1 tsp | 5 ml fresh lime juice
to taste sea salt and ground pepper

Directions

Marinated Citrus Chicken

Combine all marinade ingredients in a large bowl. Add chicken and toss to coat.
Cover and chill for at least 2 hours or over night.
Preheat the grill to medium-high.
Remove chicken from marinade and discard. Season chicken generously with salt and pepper.
Grill chicken for 12-14 minutes over direct medium-high heat, turning once. The chicken is cooked when meat thermometer reads 165°f (75°C).
Remove from grill, cover loosely with foil for 5 minutes before slicing.
Serve alongside prepared salsa.

Grapefruit Peach Salsa

Combine all ingredients in a medium bowl. Season with salt and pepper.
Set aside until ready to serve.
