Mexican Turkey Salad

Ingredients

1.5 lbs | 675 g Granny's Leftover Turkey or Granny's Boneless, Skinless Turkey Breast, roasted
5 cups | 1.25 L romaine lettuce, chopped
2 medium avocados, sliced
1/2 cup | 125 ml cooked or canned black beans, rinsed
1/2 cup | 125 ml crumbled queso blanco or mild feta cheese
1/2 cup | 125 ml fresh tomato, finely chopped
1/4 cup | 65 ml green onion, chopped
3 tbsp | 45 ml fresh cilantro, coarsely chopped
2 cups | 500 ml thin tortilla chips

Dressing

1/3 cup | 85 ml olive oil
3 tbsp | 45 ml lime juice, freshly squeezed
1/4 tsp | 1.25 ml dried chipotle powder
1/4 tsp | 1.25 ml cumin powder
1/2 tsp | 2.5 ml garlic, finely chopped
to taste salt and ground pepper

Directions

On a large platter spread lettuce as a base. Layer turkey, avocado, black beans, cheese, tomato, green onion and cilantro.
Mix dressing ingredients. Drizzle dressing over salad and serve with tortilla chips.
