Niçoise Grilled Turkey Thighs

Ingredients

1 package Sea Salt & Cracked Black Pepper Turkey Thighs, skin and bone removed
1 tbsp | 15 ml olive oil
1 tbsp | 15 ml garlic, finely chopped
1 tbsp | 15 ml anchovies, finely chopped
1 tsp | 5 ml lemon zest
1/4 cup | 65 ml fresh tomato, seeded and finely chopped
1/4 cup | 65 ml kalamata olives, pitted and diced small
1/4 cup | 65 ml feta, crumbled
1 tsp | 5 ml fresh oregano, chopped
1 tbsp | 15 ml Italian parsley, chopped
1/4 tsp | 1.25 ml fresh ground pepper

Directions

Preheat grill to medium-high heat (375°F | 190°C).
Remove skin and bones from turkey thighs and cut into 3/4 inch (2 cm) steaks. Coat each steak with olive oil.
Mix garlic, anchovies, tomato, olives, feta, oregano, parsley and pepper in a bowl.
Grill turkey thighs on one side over direct heat for about 5 minutes.
Flip each steak and move to indirect heat. Divide topping mixture equally between each steak.
Continue cooking for about 15 minutes until steaks are fully cooked. The meat should reach a minimum internal temperature of 170°F (77°C).
