Orange Chicken Fajitas

2 Granny’s chicken breasts cut in strips
2 tsp. (10 ml) chili powder
1 tsp. (5 ml) ground cumin
2 tsp. (10 ml) garlic powder
2 tsp. (10 ml) dried oregano
1 tsp. (5 ml) smoked paprika
1 tsp. (5 ml) salt
2 tsp. (10 ml) cornstarch
1/2 cup (125 ml) orange juice
2 tbsp. (30 ml) vegetable oil
1 red bell pepper, seeded and cut into strips
1 orange bell pepper, seeded and cut into strips
1 red onion, thinly sliced
to taste fresh ground black pepper

Directions

In a small bowl, combine chili powder, ground cumin, garlic powder, dried oregano, smoked paprika, salt, and cornstarch. Stir in orange juice until well combined. Set aside.
In a large nonstick skillet, heat vegetable oil over high heat. Add chicken strips in a single layer and sear for 2 minutes on each side, until golden brown. Reduce heat to medium.
Add bell peppers and red onion to the skillet with the chicken. Cover and cook for another 2 minutes, allowing the vegetables to soften slightly.
Stir in spice mixture. Cook until the liquid thickens and coats the chicken and vegetables. The liquid should be almost completely evaporated.
Serve immediately with warm tortillas.
