Oven Roasted Turkey Rub

Ingredients

1 whole Granny's Turkey (fresh or frozen)
1 1/2 tbsp | 20 ml garlic, finely chopped
1 tsp | 5 ml sea salt
1/2 tsp | 2.5 ml dried chili flakes (optional)
1 tsp | 5 ml dried oregano
1/4 tsp | 1.25 ml dried mustard
1/4 tsp | 1.25 ml black pepper
2 tbsp | 30 ml butter, melted
1 tbsp | 15 ml olive oil

Directions

Preheat oven to 350°F (175°C). Remove neck and giblets from turkey. Pat dry with paper towel. Combine all seasoning ingredients, garlic to olive oil to make a paste.
Coat the outside and inside of the turkey with the paste. Place turkey, breast side up, on a wire rack inside the roasting pan so that the juices are able to drain.
Cover the top of the bird loosely with foil. Place in oven. Remove foil after 1-2 hours depending on size of bird. A meat thermometer should read 170°F (77°C) when the bird is done.
