Slow Cooked Paprika Turkey Breast

Prep Time: 15 minutes Cooking Time: 4.5 hours 4-5 servings

Ingredients

1 whole Granny's Boneless, Skinless Turkey Breast
3 cups | 750 ml baby potatoes, halved or quartered
2 cups | 500 ml peeled baby carrots
1/2 cup | 125 ml red onion, chopped
3 cloves garlic, coarsely chopped
1/2 tsp | 2.5 ml sea salt
1/4 cup | 65 ml chicken stock, homemade or low sodium
1 tbsp | 15 ml mild or hot paprika
1/4 tsp | 1.25 ml ground pepper

Directions

Microwave potatoes on high for 4.5 minutes. Place in bottom of a 6-7 quart slow cooker.
Microwave carrots on high for 2.5 minutes, then add to cooker.
Add onion and garlic, and then season with salt.
Place frozen whole turkey breast on top of vegetables. Pour the stock over breast. Sprinkle paprika over the turkey breast and vegetables.
Cook on high setting for 4.5 hours.
When ready to serve, slice the turkey breast and place it on a platter with the vegetables. Drizzle some juice over the vegetables and add freshly ground black pepper.
