Slow Cooker Turkey Drumstick Cassoulet

Ingredients

3.3 lbs | 1.5 kg Granny’s Turkey Drumsticks
2 tbsp | 30 ml olive oil
1 cup | 250 ml onion, diced
2 tbsp | 30 ml garlic, diced
1/4 cup | 65 ml red wine
1-796 mL can low sodium whole tomatoes
1 cup | 250 ml turkey or chicken stock, homemade or low-sodium
1 (540 ml) can romano beans, drained and rinsed
1/2 tsp | 2.5 ml sea salt
1/4 tsp | 1.25 ml ground pepper
2 cups | 500 ml chopped swiss chard or baby spinach

Directions

Brown drumsticks in a deep frying pan over medium high heat, then place into slow cooker.
Sauté onion and garlic until translucent. Add red wine, simmer for 5 minutes and scrape the bottom or the pan.
Drain tomatoes. Chop and add to pan. Add stock, beans and seasoning, then stir. Add tomato and bean mixture to slow cooker and cook on low for 5.5 hours.
Set on high for 20 minutes and stir in swiss chard or spinach.
Serve with mashed potatoes or fresh cooked pasta and parmesan cheese.
