Sun-Dried Tomato Turkey Meatloaf

Ingredients

1 1/2 Package Granny's Lean Ground Turkey
1 tbsp | 15 ml olive oil
1 large onion, chopped
1 pkg | 225 ml diced pancetta or bacon
1/2 cup | 125 ml fresh breadcrumbs
8 oil packed sun-dried tomatoes, chopped
1 large egg
1/2 cup | 125 ml parmesan cheese, grated
1/4 cup | 65 ml tomato sauce
2 tbsp | 30 ml Italian parsley, chopped
2 garlic cloves, minced
2 tsp | 10 ml dried oregano
1 tsp | 5 ml sea salt
1 tsp | 5 ml ground black pepper

Directions

Preheat oven to 375°F (190°C).
Heat oil in non stick skillet over medium heat.
Add onion and pancetta and cook until crispy 5-7 minutes.
Transfer mixture to a large mixing bowl. Add remaining ingredients and mix to combine.
Form into a 2 1/2" - by 4" loaf pan and place on parchment lined baking sheet.
Bake until cooked through, about 35 minutes.
Serve alongside warmed additional tomato sauce.
