Turkey Meatloaf with Caramelized Onion Gravy

Ingredients

Meatloaf
2 lbs | 900 g Granny's ground turkey
2 tbsp | 30 ml olive oil
1 cup | 250 ml onion, finely diced
1 tsp | 5 ml garlic, diced
1/4 cup | 65 ml cornmeal
1/2 cup | 125 ml turkey or chicken stock, homemade or low-sodium
1 egg white
2 tsp | 10 ml mild paprika
2 tbsp | 30 ml fresh parsley, chopped
1 tsp | 5 ml sea salt
2 cups | 500 ml red onion, thinly sliced
Gravy
2 tbsp | 30 ml olive oil
1 tbsp | 15 ml balsamic vinegar
1 tsp | 5 ml soya sauce
4 cups | 1 litre turkey or chicken stock, homemade or low-sodium
1/2 tsp | 2.5 ml sea salt
1/4 tsp | 1.25 ml freshly ground black pepper
1 tsp | 5 ml cornstarch mixed with 1 tbsp of cold water

Directions

Turkey Meatloaf: Preheat oven to 350°F (177°C). Heat olive oil in a pan. Lightly brown onions and then add garlic. Add cornmeal and stock, bring to a simmer and then cool. In a bowl, mix cornmeal paste with egg white, ground turkey and seasoning. Place the meat mixture into greased or parchment paper lined loaf pan. Bake for 1.5 hours or until the meatloaf reaches 170°F (77°C).
Caramelized Onion Gravy :Sauté onions in olive oil over medium low heat, stirring constantly until onions are soft and turn dark brown. Add balsamic vinegar, soya sauce, and stock, then simmer until reduced by 1/3. Add salt and pepper. Add cornstarch mixture and stir until thickened. Serve over meat loaf.
